Tot (aka Hijiki) is a type of sea vegetable that is harvested along the rocky coastlines of South Korea. Think of the ocean, but similar to mushroom. It's minerality pairs great with other savory, earthy ingredients: we recommend cooking with rice, as well as adding to subtly sweet, starchy ingredients like carrots, parsnips, and other root vegetables.
We recommend 1 tbsp of Tot per 1 cup of rice, and adjust to taste!
